Walk into a restaurant, gallery or theatre and you form an impression before you sit down, look at a painting or find your seat. That impression comes from light: the colour temperature, direction, layers and shadows all signal what kind of place this is and how you should feel inside it.

Good lighting makes food look appetising, lets a painting speak for itself and turns a foyer into an arrival. Bad lighting does the opposite, and most guests feel it before they can name it.

The practical cost of getting venue lighting wrong goes beyond atmosphere. A restaurant where food looks flat under poor colour rendering loses covers. A gallery where UV damage accumulates costs restoration budgets. A theatre foyer that fails to signal occasion affects how the whole performance lands before it’s even started.

Specifying the right colour temperature, the right colour rendering index, adequate lux at task areas and a control system that adapts across the day is what separates a well-lit venue from one that simply has lights. Restaurant Lighting Design: Colour Temperature, CRI and Dimming Scenes

Restaurant lighting starts with one non-negotiable: the food has to look good on the plate. Every other consideration, atmosphere, brand identity and energy efficiency, sits underneath that.

The two technical levers that determine how food reads are colour temperature and colour rendering index. Get both right and the kitchen’s work lands on the table as intended.

Colour Temperature for Dining: 2700K to 3000K as the Starting Point

Warmer colour temperatures create conditions that make people relax and stay longer. For fine dining, 2700K is the default starting point: it produces the warm, amber-adjacent quality of candlelight without the instability of flame, signalling a slower, more considered pace from the moment a guest enters.

Fast-casual and quick-service environments use a different logic. Colour temperatures in the 3500K to 4100K range create a brighter, more energised environment that suits a higher-tempo service, and the right temperature depends on the pace you’re trying to set.

The mistake many operators make is choosing a single fixed colour temperature for the whole venue and the whole day. A restaurant that opens for lunch and closes after late evening service needs two different lighting environments, and a fixed 3000K system with no dimming capability will always be a compromise. 

CRI and R9: The Difference Between Fresh and Flat

CRI, or colour rendering index, measures how accurately a light source renders colours compared to natural daylight. The standard CRI figure, called Ra, averages eight colour samples and doesn’t include deep red. That’s where R9 comes in: it’s a separate measurement for deep red, excluded from the standard Ra calculation.

A fixture can achieve CRI 85 or even 90 while still rendering deep reds poorly, which means red meat looks grey-brown, tomatoes look dull and anything with a warm, vibrant hue loses the quality that signals freshness. Fresh food that looks vibrant under CRI 90 can appear pallid under CRI 75, with colours flatter and reds shifting toward orange.

For restaurant counters and dining rooms, specify CRI 90+ as a minimum with confirmed R9 values from the manufacturer. For fine dining, CRI 95+ with high R9 is the correct target, understood across the industry as the threshold for colour-critical environments even where it isn’t a formal standards requirement.

Layered Lighting and Dimming Scenes

A well-specified restaurant uses three lighting layers: ambient, accent and task. Ambient provides the base illuminance across the room, accent draws attention to focal points such as artwork, architectural features and the bar, and task lighting covers the areas where accurate vision matters: menus, reception desks and service counters.

Dimming scenes and smart controls allow the room to shift character across the service day without manual intervention. Two or three scenes, a lunch scene, an early-evening scene and a late-evening scene, are enough for most operations. Warm-dimming LED fixtures shift from 3000K toward 2200K as they dim, mimicking the natural drop in colour temperature of incandescent light and producing the candlelit quality a fine-dining room needs at the end of an evening service without a separate fixture specification for each time of day.

The infrastructure behind this capability matters. Dimming scenes depend on appropriate commercial distribution board capacity and correctly specified LED drivers, so the electrical scope should be designed to support the control system from the outset rather than adapted to it afterwards.

Art Gallery Lighting: Colour Accuracy, Conservation and Flexible Track Systems

Gallery lighting serves two goals that sit in tension: accurate colour rendering for the viewer and safe illumination levels for the artwork. Standard guidance positions spotlights at 30 to 45 degrees from vertical, a range that maximises surface legibility while controlling glare for viewers at normal viewing distance and is confirmed across gallery and museum lighting references as the practical standard.

Colour Accuracy in Galleries

In a gallery, the artwork is the product, and if the lighting misrepresents colour the viewer doesn’t see what the artist made. Colour-critical applications including art display require CRI 95+: at this level the difference between a warm yellow-ochre and a cadmium orange is visible, whereas below CRI 90 those distinctions compress and some shift entirely.

R9 matters here for the same reason it matters in restaurants: pigments with deep red content, including the earth tones and flesh tones common in portraiture, depend on accurate red rendering, and specifying CRI 80 fixtures to save on procurement costs misrepresents the work on display.

For colour temperature, 3000K is a well-established all-purpose starting point for gallery environments, producing a rendering quality that suits most media. Some curators and conservators prefer slightly higher temperatures for photography and contemporary work, so confirm the preference with whoever oversees the collection before specifying.

Protecting Artwork from UV and Heat

Traditional halogen and metal halide sources emit UV radiation and produce significant radiant heat, both of which accelerate the degradation of organic materials: canvas fibres, paper, binding media, pigments and varnish layers. The damage accumulates and can’t be reversed.

Correctly specified LED sources produce negligible UV output and very low radiant heat at the beam point, making LED the right choice for any gallery displaying original works on paper, canvas or organic substrate. The qualification matters: a low-cost LED spotlight with a degraded phosphor coating can allow UV leakage over time, so specifying quality fixtures and maintaining them is part of the conservation commitment rather than a separate consideration.

Track Systems for Rotating Collections

A gallery with rotating exhibitions can’t use fixed spot positions, and track systems allow fixtures to be repositioned along a continuous electrified rail without electrical alterations each time. For venues that change their hang every four to eight weeks, this is a functional requirement rather than a preference.

Modern track systems support dimming, scene control and DALI or DMX integration, letting curators programme lighting presets for each new exhibition and accommodate mixed media: a show that includes photography, textile and oil painting needs different lux levels and beam angles for each medium. The electrical infrastructure behind a track system needs to be planned at the distribution stage, because retrofitting adequate circuit capacity into an existing gallery is considerably more disruptive than designing for it from the outset.

Theatre and Venue Lighting: Foyers, Auditoria and the Sense of Occasion

Theatre lighting has two distinct worlds, and understanding the boundary between them matters for procurement. Stage and performance lighting is a specialist discipline involving dimmer racks, lantern rigging and a lighting designer working with the production team. Architectural, foyer and auditorium lighting is a different scope entirely, and a theatre commissioning a full electrical overhaul needs two separate packages scoped by contractors with the right expertise for each domain.

House Lighting vs Stage Lighting: Understanding the Boundary

Stage lighting covers all fixtures focused on the performance area, while house lighting covers everything else: foyers, corridors, bars, auditorium seating areas, backstage spaces and emergency lighting. A theatre commissioning new house lighting needs a commercial electrical contractor who understands venue environments, control systems and the compliance layer; a theatre commissioning new stage lighting needs a specialist production electrician and lighting designer. Foyer and Auditorium Lighting: Creating the Right Environment Before the Curtain Rises

The foyer sets expectations before a single word is spoken on stage. A foyer lit at 500 lux under cool white fluorescent tubes tells a guest they’re in a functional building, whereas a foyer with warm pendants, accent lighting on architecture and a bar counter at 200 lux under CRI 90+ tells them they’re somewhere considered.

Colour temperature for evening performance venue foyers should sit between 2700K and 3000K, keeping the warm quality that signals occasion. Inside the auditorium, pre-show and interval lighting needs to be bright enough for guests to read programmes and navigate rows safely, then dim smoothly to black during the performance without flicker. A poorly specified dimmer that produces flicker at low levels is a distraction the audience will notice regardless of what’s happening on stage.

Lux Levels and Standards: What EN 12464-1 and Conservation Guidance Requires

EN 12464-1 provides the reference lux levels for interior lighting across venue types. For restaurant dining areas, the standard sets a minimum of 100 lux with a unified glare rating of 22 or less, reflecting that the primary brief for dining is experiential rather than task-based. Task areas within the same venue such as reception desks and cashier positions require higher maintained illuminance levels, and the 2021 revision of the standard added guidance on how lighting affects wellbeing, mood and non-visual biological responses, extending the scope beyond pure task performance.

For galleries, conservation thresholds are well-established in the research literature. Light-sensitive materials such as watercolours, photographs and textiles should be limited to 50 lux maximum, with annual exposure limits measured in lux-hours. Oil paintings and moderately sensitive materials generally tolerate 150 to 200 lux, a range originating in Thomson’s foundational conservation research at the National Gallery and adopted widely across museum and gallery guidance since.

Colour rendering

  • Does the specification confirm both Ra (CRI) and R9 values, not just Ra?
  • For food service: CRI 90+ minimum. For fine dining and gallery display: CRI 95+

  • Does the existing distribution board have adequate capacity for the planned load and controls?

Conservation and protection (galleries)

  • Are specified LED sources confirmed as negligible UV output?
  • Do the lux levels meet conservation requirements for the most sensitive materials on display?
  • Is track lighting included for rotating exhibition flexibility?

Standards compliance

  • Does the design reference EN 12464-1 or relevant CIBSE guidance for maintained illuminance?
